Carrot Marmalade Bliss From Delicious Martha

We’re big fans of Marta Sanahuja aka Delicious Martha on Instagram, it’s not by chance that she has a 230k following. She’s shared with us our recipe for oh so yummy and a great all-rounder for the winter.

Martha says to use it on pasta, with fish or meat, on toast or as a dip with crackers. It can even be mixed with yoghurt and fruit for breakfast if you are really determined to up the game on 5-a-day. It’s very dollopable …is that a new word?? Experiment with the size of carrots to get it just the way you like it ie size doesn’t matter.

Carrot Marmalade

5 carrots (Martha says ‘beautiful carrots’ a notion that’s making me smile as beauty is surely in the eye of the beholder)

1/2 teaspoon of stevia or honey (taste and add to taste)

1 teaspoon of lemon juice

1/4 teaspoon of cinnamon

1/4 teaspoon of ground ginger

Preparation of carrot marmalade

  • Roast the carrots in the oven at 200 degrees C until tender OR cook them in water, even in the microwave.
  • When they are cooked until they are mashable, crush them together with the other ingredients and if necessary add a small amount of water to get them to a consistency you like. If you’ve good a food processor whizz away.
  • Sterilise a jam jar or two by running them through a hot wash in the dishwasher and drying them thoroughly with a clean cloth or paper towel.
  • Fill the jars and pop in the fridge. Although this is not a long lasting product it is lovely and a very nice idea for a gift!
